Warm Spinach & Portobella Mushroom Salad
Serves 4 Active Time: 20 Min Total Time: 20 Min 1 pkg (6 oz) portobella mushroom caps, 1-inch dice Salt and pepper to taste 2 Tbsp Oil 1 pkg (6 oz) Baby Spinach 1 Tbsp Extra-Virgin Olive Oil 1 Tbsp Balsamic Vinegar Preheat oven to 450 degrees. Season mushrooms to taste with salt and pepper; toss with basting oil. Arrange in single layer on baking sheet. Roast 10-12 min, until tender. Set aside. Place spinach in large bowl. Add mushrooms; season to taste with salt and pepper. Toss with oil and balsamic vinegar. Serve warm or at room temp.
