Kentucky Hot Browns

An incredible hot turkey sandwich that is a Kentucky Tradition.

3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 egg yolk, beaten
1/2 cup grated cheddar cheese (or your favorite cheese)
2 tablespoons grated Parmesan cheese
Tabasco sauce (a dash or two, or to taste)
4 slices dense bread, toasted
8 turkey slices (or enough to cover 4 bread slices)
4 slices bacon, cooked
4 slices fresh tomato

Preheat oven to 450 degrees. Melt butter in a medium saucepan. Add flour,
stirring, to make a smooth paste. Cook for several minutes. Whisk in milk
gradually, stirring constantly. Add a small amount of the hot milk mixture
to the beaten yolk and whisk until smooth. Return the yolk-milk mixture to
the saucepan and simmer until thickened, stirring constantly. Add cheeses
and Tabasco and cook until cheese is melted and sauce is thick and smooth.
Place the toasted bread slices in individual ovenproof dishes. Warm the
turkey slices (the microwave works well) and place turkey on the toasted
bread. Pour the cheese sauce over the turkey. Place the bacon slices on
top of the sauce and top each with a tomato slice. Bake in the oven until
the cheese sauce begins to bubble. Serve immediately.
Yield: 4 servings



Kentucky Hot Brown

If you're a southern belle or gentleman at heart, you have to try this
one.
Hot turkey Served over hot toast and smothered in a buttery sauce. These
are
two things Kentucky always does right--horse racing and the hot brown.

Prep Time: 25 Minutes
Cook Time: 15 Minutes
Ready In: 40 Minutes
Yields: 4 servings

1/2 cup butter
6 tablespoons all-purpose flour
3 cups milk
1/2 cup freshly grated Parmesan cheese, divided
1 egg, beaten
salt and pepper to taste
1 tablespoon butter
2 cups sliced fresh mushrooms
1 tomato, thinly sliced
1 pound thinly sliced cooked turkey
8 slices bread, toasted
8 slices bacon, cooked

In a large skillet, melt 1/2 cup butter over medium heat. Stir in enough
flour to absorb all of the butter. Slowly whisk in the milk, and 6
tablespoons of Parmesan cheese. Stir in the egg to thicken the sauce, but
do not allow to boil. Remove from heat, and season with salt and pepper to
taste. Heat remaining tablespoon of butter in a small skillet. Saute
mushrooms in the butter until soft. Set aside. Preheat your oven's
broiler. For each Hot Brown, place two slices of toast onto a heatproof
plate or dish. Cover the toast with about 1/4 cup sauteed mushrooms and a
couple of tomato slices. Place a liberal amount of turkey onto each Hot
Brown, and pour an even more liberal amount of sauce over. Smother that
baby. Sprinkle remaining Parmesan cheese over the top. Repeat with
remaining ingredients. Place the entire dish under the broiler until the
sauce is speckled brown and bubbly. Remove from broiler, criss-cross two
slices of bacon on top, and serve!


Kentucky Hot Brown

4 ounces butter
Flour to make a roux (about 6 tablespoons)
3 to 3 1/2 cups milk
1 beaten egg
6 tablespoons grated Parmesan cheese, plus extra for topping
1 ounce whipped cream (optional)
Salt and pepper, to taste
1 cup Sauteed mushrooms
1 whole tomato, sliced
Slices roast turkey
8 to 12 slices of toast (may be trimmed)
8 to 12 strips fried bacon

Melt butter and add enough flour to make a reasonably thick roux (enough
to absorb all of the butter). Add milk and 6 tablespoons Parmesan. Add egg
to thicken sauce, but do not allow to boil. Remove from heat. Fold in
whipped cream. Add salt and pepper to taste. For each Hot Brown, place 2
slices of toast on a metal (or flameproof) dish. Cover the toast with
mushrooms and thinly sliced tomatoes, then cover with a liberal amount of
turkey. Pour a generous amount of sauce over the turkey and toast.
Sprinkle with additional Parmesan. Place entire dish under a broiler until
the sauce is speckled brown and bubbly. Remove from broiler, cross 2
pieces of bacon on top and serve immediately.


Kentucky Hot Browns

6 slices (1-inch thick) white bread, toasted
2 large tomatoes, sliced
2 packages Jennie-O Turkey Store(R) So Easy(R) Turkey Breast Slices In
Homestyle
Gravy (18 ounce each)
1 1/2 cups milk
1/2 cup butter or margarine
1/3 cup all-purpose flour
2 cups shredded sharp Cheddar cheese, divided
1/4 teaspoon salt
1/4 teaspoon black pepper
6 slices Jennie-O Turkey Store(R) Turkey Bacon , cooked and cut in half
Prep Time: 30 minutes
Cook Time: 15 minutes
Servings: 8

Arrange bread slices in lightly greased 13x9-inch baking pan. Remove
turkey from package, reserving gravy. Top bread evenly with tomato slices
and turkey slices. Pour gravy into a 4-cup liquid measuring cup; add
enough milk to measure 3 cups. Set aside. Melt butter in 3-quart saucepan
over medium-high heat. Whisk in flour; cook, whisking constantly, 1
minute. Gradually whisk in gravy mixture. Bring to a boil, and cook,
whisking constantly, 1 to 2 minutes or until thickened. Whisk in 1 cup of
cheese, salt and pepper. Remove gravy mixture from heat and pour evenly
over turkey. Sprinkle with remaining 1 cup cheese. Broil 6 inches from
heat 3 to 4 minutes, or until bubbly and lightly browned. Remove from oven
and top evenly with bacon slices. Serve immediately.
