Roasted Chicken With Buttery Chipotle, Cumin And Cilantro

Serves 4
Recipe By: Robin Miller

Cooking Spray
4 halves chicken breast -- skinless boneless
salt and pepper
2 tablespoon butter -- unsalted softened
2 teaspoon chipotles chiles in adobo -- chopped
1 teaspoon cumin -- ground
1/4 cup cilantro -- chopped

Preheat the oven to 400F Coat a roasting pan with cooking spray. Season
the chicken all over with salt and pepper and place on the prepared pan..
In a small bowl, mix the butter, chipotles, and cumin until well blended.
Spread the butter mixture evenly over the chicken in the pan. Roast until
chicken is cookedthrough, about 25 minutes. Sprinkle the cilantro over the
chicken just before serving.

Recipe Notes
Meet your Quick Fix butter sauce. This version is smoky and hot, but
try other flavor combination, like parsley and dill or basil and mint
(nice with pork or lamb).
