Potato kugel is my favorite kind!

Potato Kugel

6 medium baking potatoes, peeled
1 large onion, peeled
2 large eggs
6 tablespoons butter or margarine, melted
2 tablespoons of matzo meal
1 teaspoon salt or to taste

Grate the potatoes and onion. You can do it by hand or use a food
processor. Drain off the water from the potatoes. In a bowl, mix
together the eggs, salt, melted butter or margarine, and matzo meal. Add
potatoes and mix well. Pour into lightly buttered (or "margarined")
casserole dish and bake at 400 degrees for 15 minutes. Lower to 375
degrees and cook an additional 45 minutes. Top should be brown and crisp.
Cut into squares and serve hot.
