Easy - Key Lime Yogurt Pie
Yield: 8 servings 2 tablespoons cold water 1 tablespoon fresh lime juice 1 1/2 teaspoons unflavored gelatin 4 ounces fat-free cream cheese, softened 3 (6-ounce) containers Key lime-flavored light yogurt, such as Yoplait Light Thick & Creamy 1/2 cup frozen reduced-fat whipped topping, thawed 2 teaspoons grated lime zest (colored portion of peel) 1 (6-ounce) reduced-fat graham cracker crumb crust In a 1-quart saucepan, mix water and lime juice; sprinkle gelatin over lime juice mixture. Let stand 1 minute. Place over low heat, stirring constantly, until gelatin is dissolved. Let cool slightly, about 2 minutes. In a medium bowl, beat cream cheese with an electric mixer on medium speed until smooth. Add yogurt and lime juice mixture; beat on low speed until well-blended. Fold in whipped topping and lime zest. Pour into crust. Refrigerate until set, about 2 hours. Per serving: 160 calories; 4g fat (22 percent calories from fat); 1.5g saturated fat; no cholesterol; 5g protein; 26g carbohydrate; 16g sugar; no fiber; 210mg sodium. -- Rec.food.recipes is moderated by Patricia D.
