Tomato Chutney
2 cup grape tomatoes -- halved 1/4 cup red onion -- minced 3 tablespoon golden raisins 2 tablespoon sugar 2 tablespoon apple cider vinegar 1 tablespoon ginger -- freshly minced 1/2 teaspoon red pepper flakes 1/8 teaspoon ground coriander 1/8 teaspoon ground allspice Simmer all ingredients in a saucepan over medium heat until tomatoes have broken down, stirring occasionally, about 15 minutes. Off heat, puree half the chutney in a food processor, then fold into the remaining chutney. Recipe Notes This chutney is perfect with Curried Potato and Pea Somasas.
