Would you be able to make this salad with sugar substitute? I am diabetic
and love this salad - but can't have it due to the sugar content. Thank
you!

I, too, am diabetic and found this recipe in "Weber's Big Book Of
Grilling". It calls for 1 teaspoon of sugar, but I use 1 teaspoon of
Splenda instead. Comes out fantastic, and is much better after sitting
for a few hours or overnight. The mint really adds some zip, and goes very
well with cucumber. Hope you enjoy it! It's not easy being diabetic, but
you can still eat well and enjoy food. Take care!

Cucumber Salad

1/2 cup plain rice vinegar (not rice wine vinegar, and not flavored rice
vinegar)
1 teaspoon granulated sugar (I substitute the same amount of Splenda)
1/2 teaspoon kosher salt
1 seedless cucumber (about 1 pound), peeled and thinly sliced in rounds
(if
all you can find is cucumber with seeds, just split in half lengthwise and
scrape out the seeds then slice very thin)
1 small red onion, thinly sliced
1 tablespoon finely chopped fresh mint

In a medium bowl, whisk together the vinegar, sugar (Splenda), and salt
until sugar and salt are dissolved. Add the remaining salad ingredients.
Toss, cover and refrigerate until ready to serve.
