Creamy Celery Soup
Serves 4 Published in: Everyday Food 2 tablespoon Butter 1 1/2 lbs celery (12 to 15 stalks) 1 med onion chopped 1 baking potato (8 to 10 oz) in 1/2" cubes coarse salt 2 tablespoon lemon juice 6 cup water Heat the butter in a large (4 quart) saucepan over medium heat. Add celery, onion, and potato. Season with salt. Cook, stirring occasionally until vegetables begin to soften, 6 to 10 minutes. Add 6 cups of water to saucepan and bring to a boil. Reduce the heat to medium and simmer until vegetables are very tender, about 20 minutes. Working in batches puree the soup until smooth.
