Mushroom Casserole Au Gratin

2 lb (1 kg) white mushrooms, cleaned and coarsely sliced
2 Tbsp (30 mL) chopped fresh parsley
1/2 cup (125 mL) chopped shallots
2 Tbsp (30 mL) butter
Salt and pepper
Paprika

Cheese Sauce:

1/2 cup (125 ml) grated Canadian Gruyere cheese or Canadian Swiss cheese
1 cup (250 mL) sour cream
1 egg yolk
1 egg
Salt and pepper

Serves: 4 to 6 Preheat oven at 375 F (190 C) In saucepan, saute mushrooms,
parsley and shallots in butter for 2 minute s. Season to taste with salt
and pepper. Transfer mushroom mixture to ovenproo f dish. Top with cheese
sauce and sprinkle with paprika. Bake in oven for 11 minutes. Place
casserole under oven broiler and grill for 4 minutes or unti l hot and
bubbly and cheese is golden brown.

Cheese Sauce: In bowl, mix Canadian Gruyere or Canadian Swiss cheese with
all ingredien ts. Season to taste with salt and pepper.
