Default Blueberry Muffins from JTT

Blueberry Muffins

Recipe By: Jennifer Trainer Thompson

2 cup all purpose flour
1/2 sugar
2 teaspoons baking powder
1 teaspoons salt
1 egg -- beaten
1/4 cup unsalted butter -- melted
1 cup milk
1/2 teaspoons vanilla extract
1 1/4 cup fresh blueberries
2 tablespoons turbinado sugar for topping(I just use coarse sugar
because that is what I have.)

Preheat oven to 350. Lightly spray muffin cups x 12. Combine the flour,
sugar, baking powder, and salt in a large bowl. In a separate bowl, mix
the egg, butter, milk, and vanilla extract. Stir to combine well. Add the
wet ingredients to the dry and stir just until combined. Gently fold in
the blueberries. Fill muffin cups . Sprinkle with sugar. Bake for 35
mins or until muffin tops are golden brown etc.

A place to primarily share the recipes of the unique New Mexican
cuisine but also includes other regions of the Southwest.
