Oriental Barley Pilaf
1 tsp toasted sesame oil 1 Tbsp canola or olive oil 1 cup barley 1 cup chopped celery, including leaves 1 yellow onion, chopped 3 cloves garlic, chopped fine or pressed 1/2 cup dried shiitake mushrooms, broken into pieces 4 cup mushroom broth 1 green onion, white and light green parts, chopped fine 2 Tbsp sliced almonds Heat oils in a skillet over medium-high heat until hot. Add barley, celery, and onion, and cook for 10 minutes or until vegetables are soft and barley is brown. Combine barley-vegetable mixture, garlic, mushrooms, and broth in crock pot and cook on low for 3-4 hours or until broth is absorbed and barley is soft.
