This is my mom's recipe. In spite of all the fruitcake jokes that
say nobody actually eats them, hers always seemed to disappear rather quickly! Applesauce Fruitcake 2 cups sugar 1 cup shortening 3 cups unsweetened applesauce 4 tsp. cinnamon 1 tsp. cloves 1 tsp. nutmeg 4 tsp. allspice 1 Tbsp jam (any fruit) 4 cups flour 1/2 tsp. salt 2 tsp. soda 2 eggs 1/2 lb. candied pineapple 1/2 lb. candied cherries 1 lb. candied mixed fruits 1 lb. chopped dates 1 cup raisins 2 cups chopped walnuts Combine all ingredients except fruits and nuts and mix until smooth. Stir in fruits and nuts. Line the bottom of two 9" x 5" x 3" loaf pans or one 10" x 4" tube pan with well-greased and floured double-thickness parchment paper.
