Butterscotch Banana Bread
1 3/4 cups flour (all-purpose or bread) 2 teaspoons baking powder 1/2 teaspoon nutmeg 1/2 teaspoon salt 1/2 teaspoon cinnamon 1 cup ripe, mashed bananas (2 medium) 3/4 cup sugar 2 eggs 1/4 cup melted butter 1/4 cup milk 1 cup butterscotch chips 1 cup chopped pecans (optional) In a medium mixing bowl, sift together flour, baking powder, nutmeg, salt, and cinnamon. Set dry mixture aside. In a large mixing bowl, mix bananas, sugar, eggs, and butter until well blended. Add half of dry mixture and blend. Add 1/8 cup milk and blend. Add remaining dry mixture and blend. Add remaining milk and blend well. Stir in butterscotch chips and 2/3 of the (optional) pecans. Bake in preheated 350 degree oven for 1 hour, or until done.
