Shrimp Linguini
cooking time: ~ 45 minutes 1 lb. large shrimp, peeled and de-veined 1 lb. linguine 1/4 lb. butter or margarine 1/2 onion, chopped 3 cups chicken broth 2 cups tomato, peeled and diced 1/2 cup green onions, chopped 1/2 cup Parmesan Cheese, grated 2 Tbsp. olive oil 2 Tbsp. sugar 1 Tbsp. garlic, chopped 1 Tbsp. Worcestershire sauce 1/2 tsp. thyme 1/2 tsp. cayenne pepper 1/2 tsp. black pepper 1/2 tsp. basil 1/2 tsp. tabasco sauce Prepare pasta according to directions on box. Saute green onions in olive oil (approximately 4 minutes); add garlic and stir, adding thyme, cayenne, black pepper, and basil and cook over low heat for five more minutes. Slowly add all other ingredients except for the pasta, Shrimp, and cheese. Cook over low heat (about 1/2 hour), or until the liquid is sufficiently reduced down. Saute Shrimp in some butter and garlic until 75% cooked, then add sauce and cook (an additional 2 minutes). Add the cooked pasta and toss well with the grated cheese. Serve hot.
