Request: Carrot Cake From: Rhianna Campbell carrot cake from a yellow box cake mix? Lost recipe! very moist. Cake Mix Carrot Cake Makes: one 13 X 9 inch cake 1 pkg. yellow cake mix 2 cups grated carrots 1 (8 oz) can crushed pineapple with juice, undrained (Optional) 1/2 cup water 3 large eggs 1/2 cup vegetable oil 1/2 cup finely chopped pecans (Optional) 2 tsp. ground cinnamon 1 tub premade Cream Cheese frosting or your own homemade frosting. Preheat oven to 350 degrees. Grease and flour 13 x 9 inch pan. Combine cake mix, carrots, pineapple with juice, water, eggs, oil, pecans and cinnamon in large mixing bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed for 2 minutes. Pour into prepared pan. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean.
