Foil Wrapped Chicken Breasts
6 boneless chicken breasts 1 bottle of zesty italian dressing large bag of baby carrots 1 onion butter salt pepper non-stick spray foil Thaw chicken breasts, poke small holes using a fork and marinade in dressing for a minimum of 30 minutes. Cut carrots in half and slice onion into rings. Spray foil with non-stick spray, place 3 chicken breasts onto foil surrounding them the carrots and onions. Season with salt and pepper and top with pads of butter. Spray another piece of foil and cover the chicken; fold sides and ends together. Repeat with remaining ingredients. Place on preheated grill at low heat and cook for 1 hour, turning every 15 minutes. Turn the heat up 3/4 high and brown for 20 minutes, flipping the packages every 10 minutes. Serve with rice or pasta. You can also place the foil packages in the oven at 350 for an hour, broiling them for 10 minutes to brown. -- Rec.food.recipes is moderated by Patricia D. Hill at .
