Curried Chicken and Mango Salad
This is a main course salad. 1 1/2 cup cooked chicken ; white meat without skin 2 tablespoons light sour cream 2 tablespoons lowfat mayonnaise 1 tablespoon mango chutney; chopped 1 tablespoon lime juice 1/4 teaspoon curry powder; or more to taste 1 cup mango; peeled and diced 1 cup tart apple ; diced 1/2 head Boston lettuce ; separated into leaves In a large bowl, stir together sour cream, mayonnaise, chutney, lime juice, (i squeezed the mango skin into the dressing mixture to preserve all of the juice) and curry powder.
