Apple-Cinnamon French Toast

2 large apples
5 tablespoons butter
1 cup firmly packed dark brown sugar
2 tablespoons dark corn syrup
1 teaspoon cinnamon
8 baguette slices (1" thick)

Day before serving: Peel, core, and slice apples. Grease 9x13" baking
pan. In a large heavy skillet, melt butter over medium heat. Add apples
and cook, stirring occasionally, until tender. Add brown sugar, corn
syrup, and cinnamon. Cook, stirring until sugar dissolves. Pour mixture
into the baking pan and spread to an even layer, arranging apple slices in
concentric circles. Arrange bread slices in a layer on top. In a medium
bowl, beat eggs, milk, and vanilla with a fork until combined. Pour over
bread. Cover and chill overnight.

Before serving: Preheat oven to 375°F. Remove the cover from the baking
pan and bake for 30-35 minutes until the mixture is firm and the bread is
golden. Let cool for 5 minutes. Invert a serving tray over the baking
pan and carefully flip both so that the apple layer is on top. Spoon any
apple slices or syrup that remain in the pan over the top.

Baked Fluffy Orange French Toast

6 eggs -- separated
3 tablespoons sugar
2 teaspoons orange peel -- grated
1/2 teaspoon salt
1/2 cup orange juice, from frozen concentrate
2 tablespoons skim milk
12 bread slices
1 tablespoon powdered sugar
SAUCE:
1/2 cup sour cream
1/4 cup orange marmalade

Heat oven to 450°F. Grease large cookie sheet. In medium bowl, beat egg
whites until foamy. Gradually add sugar, beating until stiff peaks form;
set aside. Beat egg yolks; stir in orange juice, orange peel, salt and
milk. Fold egg yolk mix into beaten egg whites. Dip bread slices into egg
mix until evenly coated. Place on prepared cookie sheet. Bake for 5-8
minutes or until golden brown ( do not turn toast). In small saucepan,
combine sour cream and marmalade; heat over low heat just until warmed.
Serve immediately with sauce.

Banana Bread French Toast

Bread:
1 package banana quick bread mix
1 cup water
1/2 cup mashed bananas
3 tablespoons vegetable oil
1 egg
Egg Mixtu
3 eggs
1/2 cup skim milk
1 teaspoon vanilla extract

Heat oven to 375°F. Grease and flour bottom of 9" loaf pan. In large
bowl, combine all bread ingredients. Stir 50-75 strokes; just until dry
particles are moistened. Pour into prepared pan. Bake 40-50 minutes or
until tested done. Cool in pan 15 minutes; remove from pan; cool
completely. Cut bread into 12 slices. Heat skillet to 375°F. Grease
lightly with margarine. In pie pan, combine eggs, milk and vanilla; beat
well. Dip bread slices in egg mixture, turning to coat both sides well.
Cook in skillet 2-3 minutes on each side or until golden brown.

Banana Cinnamon French Toast

1 large ripe banana
2 large eggs
1/2 cup milk
1/2 teaspoon cinnamon
4 bread slices
1 1/2 tablespoons margarine
1/2 cup maple syrup -- warmed

Blend first 4 ingredients in processor until smooth. Transfer to a 9x13"
pan. Place bread in milk mixture and soak until all liquid is absorbed,
turning bread occasionally, about 20 minutes. Melt butter in large, heavy
skillet over medium heat. Add bread and cook until golden brown, about 3
minutes per side.

8 French bread slices -- 1"
thick
4 eggs
1 cup milk
1/2 teaspoon vanilla extract
1 tablespoon sugar
1/4 teaspoon salt
2 tablespoons Grand Marnier
2 tablespoons margarine

Arrange the bread in a 9x13" casserole dish in a single layer. Combine
the eggs, milk, vanilla, sugar, salt, and Grand Marnier in a medium bowl
and beat with an electric mixer. Pour mixture over the bread and turn
slices to soak evenly. Refrigerate up to 4 hours. Just before serving
time, melt 1 tablespoon margarine in a large skillet over medium heat
until the margarine is almost smoking. Add a few slices of bread, then
reduce heat and cook on each side until golden. Repeat with remaining
margarine and bread.

Gooey Orange Oven French Toast

1/2 cup margarine -- melted
1/4 cup honey
2 teaspoons cinnamon
6 eggs
1 cup milk
1 cup orange juice
1/4 cup sugar
2 teaspoons grated orange peel
1/2 teaspoon salt
1/2 teaspoon cinnamon
16 bread slices
2 oranges -- sliced
ORANGE-HONEY BUTTER:
1/2 cup margarine -- softened
1/4 cup honey
1 teaspoon orange peel -- grated

Heat oven to 400°F. In small bowl, combine margarine, honey and 2
teaspoons cinnamon; mix well. Pour mixture evenly into 2 ungreased 10x15"
baking sheets. In medium bowl, slightly beat eggs. Add milk, orange
juice, sugar, orange peel, salt and 1/2 tsp cinnamon; mix well. Dip bread
in egg mix. Place on margarine mix in pans. Pour any remaining egg mix
over bread. At this point, can be covered and refrigerated overnight.
Bake, uncovered, for 20 minutes or until golden brown, turning halfway
through baking. Arrange on platter with orange slices. Serve with
Orange-Honey Butter.

ORANGE-HONEY BUTTER: In small bowl, combine softened margarine, honey ad
grated orange peel. Beat at high speed until light and fluffy.

1 cup milk
2 tablespoons sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
3 cups corn flakes -- crushed
8 french bread slice -- 3/4" thick

In shallow bowl, combine eggs, milk, sugar, vanilla and salt. Mix well.
In separate bowl, place crushed cereal. Dip bread into egg mixture, then
into crushed cereal. Place on greased 10x15" baking sheet. Cover.
Refrigerate overnight. Bake at 425°F for 15-20 minutes or until golden
brown, turning once.

Yankee French Toast

4 eggs
1 cup milk
2 tablespoons rum -- optional
2 teaspoons sugar
1 pinch salt
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
8 slices raisin bread -- few days old
2 tablespoons margarine

Beat eggs in bowl and then beat in milk, rum, sugar, salt, cinnamon, and
nutmeg. Place bread on a jelly roll pan. Pour mix over slices and let
stand for 30 minutes or so, preferably in refrigerator. Melt margarine in
large skillet. Fry soaked bread until golden brown on bottom. Turn and
fry other side until it browns.
