Default Peanut Butter Chicken Skewers

Here's a good summer recipe.

Peanut Butter Chicken Skewers

1/2 cup creamy Peanut Butter
1/2 cup Water
1/4 cup Soy Sauce
2 tsp. minced, bottled Garlic
3 Tbsp. Lemon Juice
2 Tbsp. packed Brown Sugar
3/4 tsp. minced Ginger Root
1/2 tsp. crushed Red Pepper Flakes
4 boneless, skinless Chicken Breast Halves

In a saucepan, combine the first 8 ingredients; cook and stir over
med-high heat for 5 minutes or until smooth. Stir a lot. Reserve half of
the sauce. Slice chicken lengthwise into 1" strips; thread onto skewers,
(soak bamboo skewers at least 1 hour in water before using). Place meat
on skewers maybe with small boiled potatoes and some colorful bell pepper
cut into bite sized squares. Grill uncovered over med-hot coals for 2
minutes, turn over and brush with peanut sauce. Continue turning and
basting for 4 to 6 minutes or until juices run clear. Serve reserved sauce
heated with the chicken skewers.
