Shrimp Or Crab Au Gratin

1/2 cup celery
1 cup sliced onion
1/4 tsp. dried pepper
1/2 cup flour
2 egg yolks
1 tsp. salt
1 lb. shrimp or crab meat
14 oz. can evaporated milk
12 oz. grated Cheddar cheese

Saute onions and celery in butter until soft. Add flour to mixture.
Gradually add milk, stirring constantly. Add egg yolks and salt and
pepper. Cook 10 minutes. Pour shrimp or crab into bowl and pour sauce
over shrimp or crab. Place in greased pan and sprinkle with cheese.
Bake at 375 degrees until hot.

Garlic Shrimp au Gratin
Yield: 4 servings

2 pounds raw shrimp
4 cloves fresh garlic, minced
3/4 cup butter
2 cups pork rinds, crushed
1/2 cup parsley, finely chopped
Salt and pepper, to taste
1 cup dry sherry

Shell and devein shrimp. Toss into boiling water, return to boil and
cook for about 2 minutes until shrimp turn all pink. Drain.

In large skillet melt 1 stick butter (1/2 cup) over low heat. Add
bread crumbs, parsley, garlic and salt and pepper. Stir a few minutes
over low heat; pour in sherry and cook 1 minute more.

Place alternate layers of shrimp and bread crumbs in well-buttered
gratin dish, ending with bread crumbs. Dot with remaining butter. Bake
at 350 degrees for 10 to 15 minutes.

1 cup thin white sauce
1/2 cup buttered bread crumbs
2/3 cup American cheese, grated
1 Tbsp parsley, finely chopped

Alternate layers of cleaned, cooked shrimp, white sauce and 1/2 cup of
the cheese in greased baking dish. Sprinkle with parsley and remaining
cheese. Sprinkle buttered crumbs over top. Bake at 400 F. for 20
minutes or
until crumbs are brown.

1/2 cup buttered bread crumbs

Alternate layers of shrimp, white sauce and 1/2 of the cheese in
greased
deep baking dish. Sprinkle top with remaining cheese and parsley, then
with buttered crumbs. Bake at 400 F. for 20 minutes or until crumbs
are brown.

Shrimp Au Gratin

2 Tbsp butter or oleo
1 cup milk
1 dash of Tabasco sauce
1 cup sharp cheese, grated
1 buttered bread crumbs
3 Tbsp flour
1 tsp Lea & Perrins Worcestershire sauce
1 green onion, chopped fine
2 cup shrimp, cleaned, boiled
1 salt & pepper to taste

Make white sauce of butter, flour and milk. Add seasonings, cheese and
shrimp. Place in casserole or ramekins. Cover with buttered bread
crumbs.
Bake at 325 F. about 30 minutes or until hot and bubbly.
