J. Alexander's Orzo and Wild Rice Salad
2 cup cooked orzo 1 cup cooked wild rice 3 Tbsp diced red onions 3 Tbsp currants 2 Tbsp corn niblets 3 Tbsp diced yellow pepper 3 Tbsp diced red pepper 3 Tbsp diced green pepper 2 Tbsp fresh chopped basil 1/2 tsp salt 1/2 tsp pepper 1/4 cup chopped parsley 1/2 cup orzo dressing-recipe below Cook orzo and wild rice per package directions; shock in cold water and refigerate. Put all ingredients in a mixing bowl and toss well. Serve very cold. One heaping cup per serving. Makes 4 servings. Orzo Dressing 3/4 cup canola oil 3/4 cup extra-virgin olive oil 1/2 cup sweet white balsamic vinegar 6 Tbsp honey 1 Tbsp Dijon mustard 1 tsp minced garlic 1/2 tsp pepper 2 Tbsp fresh basil chopped Place all ingredients in a mixing bowl, except the oil. Stir until well blended. While vigorously stirring the mixture, slowly add the oils. Refrigerate. This makes more than 2 cups. -- Rec.food.recipes is moderated by Patricia Hill at .
