Souvlakia In Pita Bread

1 onion -- chopped
Souvlakia (recipe follows)
1 tomato -- chopped
1 recipe Tzatziki Sauce
pita bread

SOUVLAKIA:
Allow 1/2 lb lamb -- pork, or beef per person
Cut meat into cubes about 1-inch thick

MARINADE:
1/4 cup olive oil
1 cup wine
2 garlic cloves -- crushed
1 bay leaf
1 teaspoons salt
1/2 teaspoons oregano
1/4 teaspoons rosemary (optional)
1/8 teaspoons pepper -- freshly ground
juice of 1 lemon
lemons -- sliced in quarters (for serving)


Combine olive oil, wine, lemon juice, garlic, bay leaf, salt, oregano,
rosemary, and pepper. Marinate meat for two to three hours. Turn at
intervals so all sides of the meat come in contact with the marinade.
Thread the meat closely on 8-inch cane skewers (soak skewers in water
before using). If broiling, place about 6-onches from heat for about 10
minutes. Turn frequently. If grilling or barbecuing, cook over hot
coals. Turn frequently and baste with marinade. Serve with lemon wedges
and pita bread.

Recipe Notes

Slit pita bread on one side towards the top, or shape into a cone.
Fill with Souvlakia as prepared above. Add onions, tomatoes, and
tzatziki.


You can do this with lamb, pork, or chicken strips.

Tzatziki Sauce

1/2 cup plain yogurt -- use Fage yogurt or drain reguluar in a
strainer for several hours.
1/2 cup sour cream
1/2 cup grated cucumber -- squeezed dry
1 teaspoons minced garlic
1 tablespoons extra-virgin olive oil
1 tablespoons minced fresh dill
1 teaspoons lemon juice or as needed
1/2 teaspoons grated lemon zest
Salt as needed
Freshly ground pepper as needed


Combine the yogurt, sour cream, cucumber and garlic in a food
processor and puree until smooth. Transfer to a bowl and fold in the
olive oil, dill, lemon juice and zest. Stir until combined and season
to taste with salt and pepper. Keep refrigerated until ready to serve.
