Congo Bars Congo Bars Congo Bars Congo Bars Recipe By : "Gooseberry Patch" Old-Fashioned Country Cookies 2/3 cup butter or margarine -- melted 1 pound brown sugar 3 eggs 1 teaspoon vanilla 2 3/4 cups flour -- sifted 2 1/2 teaspoons baking powder 1/2 teaspoon salt 1 cup chopped nuts -- optional 12 ounces semisweet chocolate chips In a large bowl or pan (after melting), combine butter and brown sugar. Add eggs one at a time, beating well after each. Add vanilla. Sift together dry ingredients and add to sugar mixture. Add nuts and chocolate chips. Pour into greased, shallow roasting pan. Bake at 350F for 22-25 minutes (don't overbake). Grease 10 x 15 inch pan. Beat butter and sugar in bowl until creamy. Add 1 egg at a time, beating well after each egg. Stir in flour, baking powder and salt; blend well. Fold in chips and nuts. Turn in pan, spread evenly. Bake until top is lightly browned, about 20-25 minutes. Transfer to wire rack; let cool. Cut into bars. Congo bars will freeze. Makes 32 bars. Bake at 400 degrees for 35 minutes. Mom sometimes melts chocolate chips on top of the Congo bar when they are still warm to make a quick frosting. When cool, cut into squares.
