Key Lime Cheesecake

1 1/2 cups chocolate wafer cookie crumbs
2 tablespoons sugar
1/3 cup butter or margarine -- melted

1 envelope unflavored gelatin
1/4 cup lime juice
3 eggs -- separated
1/2 cup sugar
1 teaspoon grated lime rind
16 ounces soft cream cheese
few drops green food coloring -- optional

Combine crumbs, sugar and butter; press onto bottom of 9" springform pan.
Bake at 325 degrees, 10 min. Cool. Soften gelatin in lime juice; stir over
low heat until dissolved. Add combined egg yolks, 1/4 cup sugar and lime
rind; cook over low heat 5 min., stirring constantly. Cool. Gradually add
to cream cheese, mixing with electric mixer until well blended. Add food
coloring. Beat egg whites until foamy; gradually add remaining sugar,
beating until stiff peaks form. Fold into cream cheese mixture. Pour over
crust; chill until firm.

Crust
1 1/2 cup fine graham cracker crumbs
2 tablespoons sugar
1/4 cup unsalted butter -- melted and cooled
Filling
1 1/4 pounds cream cheese -- softened
3/4 cup sugar
1 cup sour cream
3 tablespoons all-purpose flour
3 large eggs
3/4 cup Key lime juice
1 teaspoon vanilla
1 drop green food -- optional
Whipped cream -- for garnish
Lime slices -- quartered for garnish
Mint sprigs -- for garnish

Make the crust: In a bowl stir together the crumbs and the sugar and stir
the butter in well. Pat the mixture evenly onto the bottom and 1/2 inch up
the side of a buttered 10-inch springform pan. Bake the crust in the
middle of a preheated 375F oven for 8 minutes. Transfer the pan to a rack
and let the crust cool. In a bowl with an electric mixer, beat together
the cream cheese and the sugar until the mixture is smooth. Beat in the
sour cream, the flour, the eggs, one at a time, beating well after each
addition, the lime juice, the vanilla, and the food coloring. Beat the
mixture until it is smooth. Pour the filling over the crust. Bake the
cheesecake in the middle of a preheated 375F oven for 15 minutes. Reduce
the temperature to 250F, and bake the cheesecake for 50 to 55 minutes
more, or until the center is barely set. (The cheesecake will continue to
set as it cools.) Let the cheesecake cool on a rack and chill it, covered,
overnight. Remove the cheesecake from the pan and transfer it to a cake
stand. With a pastry bag fitted with a decorative tip, pipe the whipped
cream into rosettes on the cheesecake. Garnish the cheesecake with the
lime slices and the mint sprigs.

16 ounces cream cheese -- softened
1/2 cup sugar
2 tablespoons fresh lime juice
1 teaspoon grated lime peel
1/2 teaspoon vanilla
2 eggs
1 9 inch graham cracker pie crust

Mix cream cheese, sugar, juice, peel and vanilla with electric mixer on
medium speed until well blended. Add eggs. Mix until blended. Pour into
crust. Bake at 350ºF for 40 minutes or until center is almost set. Cool.
Refrigerate 3 hours or overnight.
