Default Squash (2) Collection

Squash Casserole
Squash Squares

Squash Casserole

5 Lbs yellow squash
2 eggs, beaten
1 cup seasoned bread crumbs + extra for topping
1/2 cup (1 stick) butter
1/4 cup sugar
salt & pepper to taste
2 Tbsp onion, chopped

Cook squash till tender. Drain, mash.
Add eggs, 1 cup crumbs, butter, sugar, salt & pepper, onions.
Turn into a 3 qt. casserole dish lightly sprayed with non stick spray.
Cover with layer of bread crumbs.
Bake 350 for 20-25 minutes until lightly browned.


Squash Squares

1/4 cup olive oil
1 cup finely chopped onions
1 tsp. minced garlic
2 1/2 cup shredded zucchini or yellow squash or mixed
6 medium eggs
1 1/2 cup bread crumbs, plain
1/4 tsp. cayenne pepper
1/2 tsp. salt
1/2 cup chopped fresh parsley (or) 1/4 cup dried parsley
2 cup grated cheese
1/2 cup parmesan or Romano cheese
1/4 cup sesame seeds (opt)

Preheat oven to 325. In skillet, saute the onions in olive oil. Add
garlic, saute 3 min.
In bowl, add eggs, bread crumbs, pepper, salt, parsley, grated cheese,
cooked squash.
Grease 9 x 13 pan with olive oil. Pour squash mixture in pan. Sprinkle
top with parmesan cheese, sprinkle sesame seeds on top.
Bake 30 min. Cool, cut in squares


You can fry squash coated with salt, pepper and corn meal & add sliced
onions
You can make squash fritters
Squash can be steamed
Squash Bread can be made exactly like Zucchini Bread
