Greek Artichoke Pasta
10 ounces pasta of choice (wheat is best for you!) 1 (14 ounce) can artichoke hearts, drained and chopped 8 ounces feta cheese, coarsely crumbled 2 plum tomatoes, cored and diced 1/2 cup red onion, sliced 2 cloves garlic, sliced 1/2 cup black olives, sliced 1/4 teaspoon red pepper flake 3/4 cup Extra Virgin Olive Oil Juice of 1/2 lemon Cook pasta according to package Cook red onions and garlic in olive oil over medium heat. Set aside. (Cook until the onions become golden in color) Combine cooked pasta with all the ingredients. Stir well and serve -- Rec.food.recipes is moderated by Patricia Hill at .
