Orange Coconut Bran Muffins
1 1/4 cups all-purpose flour 1 tablespoon baking powder 1/2 teaspoon salt 2 tablespoons sugar 1/4 cup orange candy slices, cut up 1/2 cup coconut 1 1/2 cups bran cereal 1 cup milk 1/4 cup orange juice 1 egg 1 tablespoon vegetable oil 1 teaspoon coconut flavoring In a medium mixing bowl, stir together flour, baking powder, salt, sugar, coconut, and candy pieces. Set aside. Measure bran cereal, milk, orange juice, and coconut flavoring into a large mixing bowl. Stir to combine and let stand 1 to 2 minutes or until cereal softens. Add egg and oil and beat well. Add flour mixture, stirring only until combined. Fill 12 lightly greased muffin cups about 2/3 full.
