Sea Bass Italiano
Baked Sea Bass With Shrimp Sauce

Sea Bass Parmesan

Cooking Time: Under 15 Minutes

1 1/2-2 lbs. Sea Bass Fillets, rinsed in cold water, patted dry and cut
into bite-size pieces
4 Cloves Garlic, chopped
2 Lemons, cut into wedges
1 1/2 cups Italian Tomatoes, chopped
1/2 cup All-purpose Flour
1/2 cup Mixed Black and Green Olives, chopped
5-6 Tbsp. Parmesan Cheese, grated
3 Tbsp. Fresh Parsley, chopped
2 Tbsp. Olive Oil
1 1/2 Tbsp. Lemon Juice - fresh squeezed
2 tsp. Black Pepper - freshly ground
Salt - to taste

Mix flour together with salt and black pepper, then dredge Sea Bass pieces
in flour mix to coat evenly. In a large saucepan, saute garlic in olive
oil over medium-high heat (about 1 minute), then add fish and saute (8-10
minutes), or until browned on all sides; stir in tomatoes, olives, parsley
and lemon juice; cover and cook (1-2 minutes). Serve hot topped with
freshly grated Parmesan cheese, to taste - and wedges of lemon to the
side.

Sea Bass Italiano

Cooking time: 20 minutes

1 1/2 lbs. Sea Bass Fillets, cut into 4 servings
4 Cloves Garlic, crushed
2 Lemons, cut into wedges
1 Onion, chopped
2 cups Prepared Spaghetti Sauce, seasoned with favorite herbs - to taste
1/2 cup Mushrooms sliced
1/2 cup Mozzarella or Cheddar Cheese, grated
1/4 cup Whole Olives, sliced
Olive Oil or Vegetable Oil for frying
Fresh Parsley, chopped - as a garnish
Salt - to taste
Black Pepper, freshly ground - to taste

Place Sea Bass Fillets in a buttered glass baking dish and top with
onions, mushrooms and olives. Add garlic to spaghetti sauce and pour over
top of fish and bake (10 minutes) at 400 F. Remove from oven and sprinkle
with cheese of choice, then bake (10 minutes), or until fish flakes easily
when tested with a fork. Plate 1 fillet per serving, spoon on any
additional sauce, and serve hot with chopped parsley as a garnishment and
a lemon wedge on the side.

Baked Sea Bass With Shrimp Sauce

Cooking time: 20-25 minutes

1 1/2 lb. Sea Bass Fillets
1 can (10 1/2 oz) Cream of Shrimp Soup
2 cups Ritz.,or similar Crackers, crushed
1 cup Tiny Cooked Shrimp
1/4 cup Butter, melted
1 Tbsp. Onion, grated
1 Tbsp. Fresh Lemon Juice
1/2 tsp. Worcestershire Sauce
1/2 tsp. Hot Pepper Sauce - or to taste

After preheating oven to 375 F, put Sea Bass Fillets in a shallow, greased
baking dish; spread soup over top and sprinkle with crushed crackers. Mix
together tiny cooked Shrimp, butter, onion, Worcestershire Sauce, hot
pepper sauce, and lemon juice - pour over crackers. Bake (20-25 minutes),
or until fish flakes easily when tested with a fork.
