Date and Walnut Loaf

Recipe By :RUTH ISABEL ROSS

225 grams dates -- (8 oz/l-1/4 cups) chopped
200 ml boiling water -- (7 oz/2/3 cup)
125 grams margarine -- (4 oz/1 stick)
50 grams walnuts -- (2 oz/1/2 cup) well chopped
200 grams sugar -- (7 oz/2/3 cup)
275 grams white (all-purpose) flour -- (10 oz/2-1/2 cups)
1 egg -- beaten
1 tsp baking soda -- (l-1/4 US tsp)
a little milk

Soak the chopped dates in the boiling water in a large saucepan for 15
minutes. Add the margarine and let it melt. When this has cooled (about 10
minutes), add the chopped walnuts, sugar, flour and beaten egg. Mix the
bread/baking soda with a little milk. Add to the mixture and stir well.
Line the base of 2 x 450 G/1 lb loaf tins with tin foil and grease the
sides Bake at 180 -200 C/ 35(MOO F/gas 4-6 for 1 hour and 10 minutes. Cool
the loaves in the tins and then put on a wire rack.

Description: "A date loaf that is quickly prepared, helped by the melting
method. Like
everything made with dates, it will remain moist for some days."
