Default CORRECTION for Hummus

Correction: Yikes, I left out the olive oil!
Add a little as you process the garbanzo beans!


Request Subject: tahini
I have a tub of tahini paste that I have to use before it expires. I have
No idea what to make - besides falafel and tahini sauce.

Hummus

1 can of garbanzo beans, drained and liquid reserved
Garlic
Lemon juice (fresh is best)
Tahini
Cumin
olive oil
Salt

Put drained garbanzo beans, juice of half a lemon, 1/2 tsp cumin, 1 clove
of garlic, a little oilve oil and several Tbsps of the reserved liquid in
a
blender or food
processor and puree. Taste and add 1 Tbsp or more tahini to taste. Puree
just to mix. Salt to taste. You may need more of the reserved liquid. If
not, toss it out. I usually end up adding more lemon, cumin and tahini but
I would suggest going easy and then adding more if needed. Chill for at
least an hour to let flavors marry. Serve with fresh veggies like baby
carrots and celery sticks, toasted pita triangles and/or crackers.
Refrigerate leftovers.
