Default Using Pumpkin (7) Collection

Cocoa Almond Pumpkin Squares
Pumpkin Custard
Pumpkin Figaro
Pumpkin Crunch
Pumpkin Treat
Pumpkin Apple Casserole
Dinner In A Pumpkin

Cocoa Almond Pumpkin Squares

1 cup flour
1/2 cup quick cooking oatmeal
1/2 cup soft butter or margarine
2 cup cooked & mashed fresh pumpkin or canned
1 (13 oz.) can evaporated milk
3 eggs
1 1/4 cup brown sugar
2 Tbsp. cocoa
1/2 tsp. salt

Make the crust by combining the flour, oatmeal, and butter. Mix until
crumbly. Pat into 9"x12" baking pan. Bake at 350 degrees for 15 minutes.
Meanwhile Filling: Combine pumpkin, milk, eggs, 3/4 cup brown sugar,
cocoa,
salt and spices in mixing bowl. Beat until well blended. Pour into crust.
Continue baking at 350 degrees another 25 minutes.

TOPPING

1 tsp. ground cinnamon
1/2 cup chopped natural almonds (I use walnuts)
2 Tbsp. soft butter or margarine
Additional whipped cream (opt.)
Additional chocolate decors (opt.)
Sugar
2 Tbsp. butter

Mix well and sprinkle over filling. Bake another 20 to 25 minutes at 350
degrees until filling is set, but still soft. Cool in pan. Cut in squares.
Serve with whipped cream.



Pumpkin Custard

1 cup canned or cooked pumpkin (fresh mashed)
2 eggs, slightly beaten
1/2 cup light brown sugar
1/2 tsp. salt
1/4 tsp. ground ginger
1/2 tsp. ground cinnamon
1 cup cream or milk or skim milk

Place ingredients in a mixing bowl, mix slowly but thoroughly with egg
beater or electric mixer. Put into custard cups and set cups in a shallow
pan of water. Bake in 325 degree oven for 40 or 50 minutes or until
custard
is firm. Serves 4. Tastes like pie filling.



Pumpkin Figaro

16-18 Fig Newtons
1/2 cup cream cheese
1/2 cup chunky peanut butter
1 1/2 cup pureed pumpkin
3/4 cup sugar
1 egg
1 tsp. pumpkin pie spice
1 Tbsp. vanilla
5 oz. evaporated milk
Fresh whipped cream

Grease and flour an 8 x 8 pan. Closely lay Fig Newtons in pan. Mix
together cream cheese and peanut butter thoroughly. Spread mixture over
Fig
Newtons, creating a tight seal. Mix pumpkin, sugar, egg, spice, vanilla,
and milk. Pour mixture over layered Fig Newtons with the creamed peanut
mixture. Bake at 350 degrees for approximately 50 minutes to 1 hour. Serve
with whipped cream.



Pumpkin Crunch

3/4 cup cold milk
1 (4 oz.) pkg. Jello instant vanilla
1/2 cup solid pack of pumpkin or fresh
3/4 tsp. pumpkin spice
2/3 cup chopped almonds
2/3 cup semi-sweet chocolate chips
3 1/2 cup Cool Whip
1 pie crust

Bake pie crust. Pour milk into bowl; add pie filling. Beat until
blended, mixture will be thin. Let stand 5 minutes. Blend in pumpkin
spice, almonds, chips, and cup of Cool Whip. Spoon into pie crust. Chill 4
hours before serving. Spread remaining Cool Whip topping.



Pumpkin Treat

1 cup water
3 cup pumpkin, diced
1 clove garlic, chopped
1 Tbsp. fresh ginger, chopped
1 Tbsp. low-salt soy sauce
Freshly ground pepper
1 tsp. corn flour (cornstarch), mixed with
1 Tbsp. cold water
3 tsp. toasted sesame seeds

Bring water to the boil and stir fry pumpkin for 15 minutes with garlic
clove and ginger. Add soy sauce and pepper; simmer for another 2 minutes.
Thicken with corn flour mix. Simmer for 1 minute. Sprinkle with sesame
seeds and serve.



Pumpkin Apple Casserole

2 1/2 cup fresh pumpkin cut in sm. slices or chunks, pared
1 1/2 cup apples in large slices, pared
1/2 cup butter or margarine
3 1/2 Tbsp. brown sugar
1 tsp. cinnamon
1/2 cup nuts, broken
Salt to taste

Prepare pumpkin and apples. Melt 3 tablespoons butter; combine with brown
sugar, cinnamon, nuts and salt. Place a layer of pumpkin in a 2 quart
casserole. Drizzle with butter mixture. Top with apples. Drizzle with
mixture. Repeat. Dot with remaining butter. Cover and bake at 350 degrees
for 45 to 60 minutes or until apple and pumpkin are tender. Serves 4.



Dinner In A Pumpkin

1 med. size pumpkin, topped and cleaned out
1 lb. ground beef, browned and drained
1 pkg. Uncle Ben's long and wild
rice, fixed according to directions
1 can mushrooms or 1 cup fresh mushrooms
1 can cream of mushroom soup

Combine ingredients and put in pumpkin. Put top on pumpkin. Place
pumpkin on cookie sheet in oven preheated to 350 degrees. Bake for 2
hours.
Serve dinner in pumpkin. May use pumpkin as vegetable and serve with
margarine and brown sugar or honey. Do not open pumpkin while baking or it
will expand and top will not fit on pumpkin again.
