Ginger Chicken

Serving Size : 4

2 whole chicken breasts
salt
black pepper
paprika
1 egg yolk
1/2 cup honey
1/4 cup rum
1/2 cup chicken stock
2 cloves garlic -- crushed
1/4 cup preserved ginger -- chopped
1/4 teaspoon nutmeg

Season chicken with salt, pepper, and paprika to taste and place in
shallow roasting pan. Beat egg yolk until light. Add honey, rum, and
chicken stock. Stir in garlic, ginger, and nutmeg. Pour over chicken.
Bake at 375 degrees for 45 to 60 minutes, basting every 15 minutes.
Serving Ideas : Serve over rice.

Ginger Chicken

9 pieces of chicken, as desired
1-2 tsp. ginger
1 Tbsp. vegetable oil
1 1/2 Tbsp. sugar
2-3 Tbsp. soy sauce

Wash and remove skin from chicken pieces. Dry on paper towels. Pour 1
tablespoon vegetable oil and 2 to 3 tablespoons soy sauce in 9"x13"
baking dish. Add chicken pieces, turning to coat with oil/soy mixture.
Sprinkle with ground ginger, sugar and a little more soy sauce.

Bake, covered with foil for 20 minutes at 350 degrees. Uncover, pour 1
tablespoon soy sauce on chicken. Cover and bake 20 minutes longer.
Repeat basting and baking time for 1 hour total.

Ginger Spiced Chicken

1 lb. chicken breast strips
2 garlic cloves, minced
1 Tbsp. oil
Lg. red pepper
1 cup sliced mushrooms
3/4 cup water
1 Tbsp. cornstarch
3 Tbsp. soy sauce
1/2 tsp. ginger
1 chicken bouillon cube
4 cup cooked rice

Saute chicken, garlic in oil until brown, about 4 minutes. Stir in
peppers, mushrooms, cook and stir until tender, 2-3 minutes. Add water
and cornstarch and soy sauce in small bowl. Stir until smooth. Stir in
chicken mixture. Add ginger and cube. Cook over medium heat 1 minute.
Serve over cooked rice.

Glazed Apricot - Ginger Chicken

4 boned, skinless chicken breasts (1 lb.)
1/4 cup broken walnuts, pecans or almonds
2 Tbsp. butter
Salt & pepper
1/3 cup apricot or peach preserves
1 Tbsp. vinegar
1/4 tsp. ground ginger

Rinse chicken and pat dry. In a large skillet, cook chicken and nuts
in butter over medium heat for 8 to 10 minutes or until chicken is
tender, turning occasionally. Transfer chicken to a serving platter,
reserve juice in pan.
For glaze, stir preserves, vinegar and ginger into juice of pan. Cook
over medium heat for 1 or 2 minutes until heated through. Spoon glaze
over chicken.

Pineapple Ginger Chicken

4 med. boned skinless chicken breast halves
1 (8 oz.) can pineapple slices or chunks in own syrup
1 tsp. cornstarch
1/2 tsp. grated gingerroot or 1/8 tsp. ground ginger
1/4 tsp. salt
1/2 (8 oz.) can (1/2 c.) sliced water chestnuts, drained
2 cup hot cooked rice
1 (6 oz.) pkg. frozen pea pods, cooked and drained

Spray electric skillet with non stick spray coating. Preheat skillet
over medium heat. Add chicken. Cook over medium heat 8 to 10 minutes
or until tender and no longer pink, turn to brown evenly. Remove from
skillet. Keep warm. Meanwhile drain pineapple chunks, reserve juice.
Add water to juice to equal 1/2 cup. Stir in cornstarch, gingerroot
(ginger) and salt. Add to skillet. Cook and stir until thick and
bubbly. Cook and stir 1 minute more. Gently stir in pineapple and
water chestnuts. Heat through.

On serving platter or 4 plates arrange rice (hot), pea pods (cooked
and drained) and chicken. Spoon sauce over chicken. Serves 4. 321
calories per serving.

Can use peaches instead of pineapple chunks. Better with pineapple.

Chicken With Ginger And Onion

4 chicken breasts
8 sprig onions
Oil for frying
3 tsp. crushed ginger
1 tsp. salt
4 tsp. sherry
2 1/2 Tbsp. soy sauce
1/2 tsp. sugar
1/2 tsp. sesame oil

Remove the chicken meat from the bones and cut into cubes. Chop the
onions. Heat oil in large fry pan. Saute the onion, ginger, and salt
for 1 minute. Add the chicken and mix well. Cook for 2 minutes. Add
the sherry, soy sauce, sugar, and sesame oil. Cover and cook for 5-10
minutes or until chicken is tender. Serves 4.

Ginger And Onion Chicken

1 chicken; cut up
1 tsp. salt
1/4 tsp. pepper
1/4 cup flour
1/4 to 1/2 cup oil
2 to 3 lg. onion, cut
1/4 cup ginger; grated or minced
2 Tbsp. soy sauce
2 Tbsp. sugar
2 tsp. cornstarch

Deboned chicken cut up small works best. Season chicken with salt and
pepper. Dust with flour. Fry chicken until nearly done. Remove chicken
from oil and saute ginger and onion. Stir in soy sauce, sugar and
cornstarch dispersed in water. Bring to boil. Return chicken, add 1 to
2 cups of water. Cover tightly and simmer until chicken is tender.
Serve with rice.

Chicken With Ginger

1 skinless, boneless chicken breast
1 Tbsp. vegetable or peanut oil
1/2 cup thinly sliced onion rings
1 Tbsp. finely minced garlic
2 Tbsp. finely shredded fresh ginger root
1 Tbsp. soy sauce
1 Tbsp. red wine vinegar
1 Tbsp. sugar
1/2 cup chopped scallions or green onions

Cut breast meat into small cubes, about 3/4 inch in diameter. Heat the
oil in a skillet. Add onion rings and garlic. Cook, stirring until
onions turn golden brown. Add chicken pieces and stir so they do not
stick. Cook, stirring until pieces lose raw look.
Blend ginger, soy sauce, vinegar and sugar. Add this to chicken. Cover
and cook about 3 minutes. DO NOT OVER COOK. Stir in scallions or green
onions. Serve with rice. 2 to 4 servings.
