Default Angel Date Cookies

Angel Date Cookies

2 egg whites, room temperature
1/4 tsp salt
1/2 to 3/4 cup sugar
1 tsp vanilla
1/2 to 1 cup chopped dates
1/2 to 1 cup chopped pecans mixed together with 1 Tbsp. flour

Add salt to egg whites in mixer bowl. At high speed of mixer, beat
egg whites until foamy. Continue beating at high speed and gradually
adding sugar as you beat. When peaks are very stiff fold in vanilla,
dates, and nuts (with flour). Drop by rounded teaspoons onto greased
cookie sheets. Cookies will spread as they cook so don't put too
close together. Bake at 350 degrees for 10-12 minutes or until
lightly browned. Cool briefly on pans, then remove to racks to
finish cooling.
