Default Ruote with Broccoli and Anchovies

Ruote with Broccoli and Anchovies

Yield: 6 servings

2 ounce can anchovies, drained and chopped
1 Tablespoon lemon juice
1 bunch broccoli, trimmed and cut into large florets
Salt
1/2 cup olive oil
1 Tablespoon minced garlic
1/4 to 1/2 teaspoon red pepper flakes
1 pound ruote (wheel-shaped pasta) or rotelle

In a small bowl combine anchovies and lemon juice; set aside. Bring a
large saucepan of salted water to a boil. Add broccoli and cook until
tender crisp, about 3 minutes. Drain and chop into 1/2 inch pieces.
Reserve 1/4 cup cooking liquid. In skillet heat oil over medium heat. Add
garlic and red pepper. Stir in broccoli. Cover and cook 2 minutes.
Meanwhile, cook pasta according to pkg directions. Transfer to a warm
serving bowl. Add broccoli, reserved cooking liquid and anchovies; toss.
