Default Taco Filling

I make an excellent chicken taco filling in the crock pot. It's really
simple,
too, and has almost no fat. Also excellent for enchiladas or for nachos or
anything else you might want to use it for :-)

Taco Filling

boneless, skinless chicken breasts
a jar of Trader Joe's tomatillo salsa (the smaller jar)
crushed garlic

Put several boneless, skinless chicken breasts in the bottom of a crock
pot (however many you use depends on how much chicken you want to end up
with. I usually use around 6). On top of the chicken, pour a jar of Trader
Joe's tomatillo salsa (the smaller jar) and then add some crushed garlic
(quantities depends on how garlicy you want it - I usually use about 4-6
cubes of the frozen crushed garlic from Trader Joes). Don't stir...don't
do anything. Just put the lid on and turn on your crock pot. The chicken
falls apart into tender, juicy shreds after several hours and it's so
delicious in tacos, burritos, enchiladas, whatever. It also freezes well,
so you can make a large pot of it and freeze half or several serving-size
portions to take out when you want some tacos :-)
