Drying figs -- how dry?
The great Fig Festival is pretty much over, but dehydrating proved the
most difficult part. Figs I almost-quartered (leaving them opened) dried quite crispy. I've never seen commercial crispy figs, but don't mind snacking on these. Halves simililarly. The whole ones, depending on size and moisture content, either shrank down to resemble supermarket "dried figs", or retained considerable plumpness after 48 hrs in the dehydrator. One zipped ziploc bag left at room temperature had a fig with blue hair this morning. Are they all contaminated? I tossed the hairy fig, but worry about his companions. In short, how dry is dry? Any guidelines/advice? |

I've dried them and I cut them in half, almost, lay out flat and dry
until leathery. I store them in sealed by Tilia fruit jars and they don't seem to get any color of hair on them. I don't much like dried figs but the DW uses them for snacks.
