Default Is it sealed?

I made some jam last night. This morning when I checked the jars, the lid
on one poinged down when I pressed it. But then it stayed down, and every
time before when a jar didn't seal appropriately the lid would poing down
when pressed but poing back up.

So does this jar go in the fridge or on the pantry shelf?

When I get one that does that I pick it up lightly by my fingertips and
hold it about a quarter inch off the towel it was sitting on. If it's
going to hold the seal you won't pull the lid off. I still give it an
extra mark and put it in the front of the stack or put it in the fridge,
just in case. Waste not, want not.

Not all vacuum seals are equal. A poor vacuum seal usually means there
is still too much air remaining in the headspace of you container. CC

And as such, refrigerate it and use it first.

It's usually a good idea to wait 24 hours before testing for seal. It
certainly won't hurt the jam to be in the fridge, sealed or unsealed.

Thanks, George -- I put it in the fridge.
