Does any one know if you can freeze eggplant?

One thought I had was to grill thick slices then freeze them?

I've frozen blanched slices for later use but they weren't that tasty
when thawed. Okay to use in casseroles and soups and stews but not grilled.

Best way to freeze them in my opinion is either as moussaka or as
caponata. Should be some recipes if you Google this newsgroup.

I got a great recipe off this group several years ago (2001?) for
caponata that froze very well. The "getting mushy" result of freezing
doesn't matter then.
