All my peppers froze last night! We covered them, but it got so cold that
most of the pepper fruits froze, many of them solid. I know you probably never freeze down there, George, but I thought you might know anyway. Do you think they will still ferment alright for sauce, or would I be better off just dehydrating them for chili powder or crushed pepper? I got them all picked right away this morning, so there's no chance of them spoiling. Any help would be appreciated. Thanks, Lightnin Dave |

I'm dehydrating peppers today; I stripped the plants last night. I didn't think it was supposed to freeze until Monday night. Nasty surprise when I heard the weather report yesterday afternoon. Bob |

Thanks, Lightnin Dave Shucks Dave, I gather them all year long and freeze them in bags in the freezer. Just thaw them, chop them up and proceed with whatever you want to make. Fermenting will probably be the best way to go. You will find they will release more juices after freezing has broken down the cell walls. Don't know what will happen if you try to dry and make chili powder or crushed peppers. George |

Bob Where do you people live, Canada? It's too early to freeze but we did get a bunch of much needed rain today. Freeze! Should be one sometime in November or December or, maybe, in January or February. Move south fellas, move south. George |
