Can I substitute Fruit Fresh for the lemon juice in the SureJell recipe for
peach jam?

I wouldn't. Fruit fresh is ascorbic acid (vitamin C). Citric acid is
what you want for the jam acid. I'd use lime juice before I'd use
ascorbic acid. I might even use vinegar before I'd use Fruit Fresh.
