Default Pears, pears, and more pears

We finally waded through two five-gallon buckets and a 2-gallon bucket
of pears, finishing yesterday afternoon.

Total canned goods equal 7 quarts of pear slices; 7 quarts of pear
sauce; 7 pints of cinnamon pears; 7 pints of creme de menthe pears, and
7 pints of pear honey. Saved about a dozen for eating out of hand. Now -
our pear tree is ready to pick - looks we'll be busy again. VBG

I'm ready to move on to some other fruit for a change. Bought a fine,
ripe papaya yesterday. Big one too, about a foot long and dead ripe. We
ate a bunch of it for lunch but, I wonder, does anyone know of a recipe
using papaya that can be canned? Kroger's has more of them at a
reasonable price and I do like papaya.

Strawberry Papaya Jam is good. I made some a couple of years ago that was a
big hit and the color is gorgeous. (brag alert) It got 1st place at the
State Fair of Texas, berry & fruit jam category. :-D

Strawberry Papaya Jam

1 quart strawberries, crushed
1 1/2 pounds finely chopped papaya
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
6 cups sugar
1 box Sure Jell pectin

Mix strawberries and papaya together. Measure 4 1/4 cups of prepared fruit.
Combine fruit and Sure-Jell in large saucepan. Place over high heat and
stir until mixture comes to a full boil. Add sugar and stir until
dissolved. Bring to a full rolling boil and continue boiling for 1 minute,
stirring constantly. Remove from heat and skim off foam. Ladle into hot
1/2 pint jars leaving 1/4 inch headspace. Process in water bath canner for
10 minutes. Makes about 8 1/2 pint jars.

You could always make perry from them. Juice or press them to get the
juice, and let it ferment. Similar to cider, but with a subtle pear
flavour instead of a subtle apple flavour.
