Default Japanese Icicle Radish

Last year my crop was a disaster (sowing too late) this year I have a
surplus. The smaller 6 inch radish are ideal raw in a salad.
The larger 18 inch ones, my wife bakes into a Cantonese savoury cake.
However, I am interested in pickling the smaller ones. Is this possible ?

Whilst playing around on the net, found this:

OTH, I have successfully pickled radishes for the short term (less than 6 mo)
by preparing the marinade of my choice based on (rice is nice or white wine)
vinegar, a little salt or soy, onions or garlic. Joy of Pickling has a couple
recipes I think.

Agreed, I would rather add a few raisons or sultanas to a salad than eat
sugary pickles - although Mango chutney is hard to resist. BTW, a question
on pickled gerkins. Are gerkins the same as baby courgettes ? I have a dozen
or so courgette plants starting to crop, but can't find gerkin seed in any
of the catalogues.

Are these like daikon BRBR

The Japanese pickle these in a rice bran mash I think. I have picked them up
bagged in a oriental food store, after pickling, they have a yellow color to
them.

It's called nuka... and it's a salt ferment. First step is to get the
nuka fermenting and I forget how to do that and I don't have the
Japanese cookbooks handy.

It's not for long-term storage though. It's like you stick the veggies
into the mash and let them ferment for a day at most, most of the time
just a few hours.

Never heard of courgettes, but spell them leetle cucumbers *gherkin* and you
might get a hit.
