Last year my crop was a disaster (sowing too late) this year I have a
surplus. The smaller 6 inch radish are ideal raw in a salad. The larger 18 inch ones, my wife bakes into a Cantonese savoury cake. However, I am interested in pickling the smaller ones. Is this possible ? TIA Pete |

TIA Pete Whilst playing around on the net, found this: http://www.food-nepal.com/recipe/R029.htm OTH, I have successfully pickled radishes for the short term (less than 6 mo) by preparing the marinade of my choice based on (rice is nice or white wine) vinegar, a little salt or soy, onions or garlic. First step is to get the nuka fermenting and I forget how to do that and I don't have the Japanese cookbooks handy. It's not for long-term storage though.
