I am looking for some food grade Chemicals - noteably Calcium CHloride.
So Why am I posting in in RFP - I did read where the addition of Calcium
Chloride helps improve the "snap" of Pickled cukes.

I have reached a brick wall in so far as sourcing Food Grade Chemicals
(in under a truck load quantity) and I have gotten some responses as if
I am looking to brew up some form of WMD.
I would appreciate any pointers as to suppliers or sources.

Most food preserving chemicals in use by home preservers are sold in
very small lots.

I just ordered Ball's Pickle Crisp from a web site, IIRC, that is
calcium chloride. Used for crisping up pickles without resorting to a
tedious lime procedure. YMMV

Check at homebrew supply stores. They sometimes sell calcium chloride
for conditioning the water for making beer. I don't remember exactly
what it's supposed to do.

You can also replace the calcium chloride with Epsom salts and that kind
of works, but the magnesium is not as effective as calcium for crisping
the vegetables. (actually, it is just as effective as calcium, but they
soften up more during heat processing.)

I don't know about crisping pickles but it is used in beer making to
lower the pH of the mash.
Probably the best place to obtain food grade CaCl2 would be a home
brew supply store.

They do a large amount of mailorder. At More Beer, CaCl2 is priced at
$2.00 for 2 oz. or, a much better rate of $4.50 per pound, plus
shipping.
