Default Plink, plink, plink

As I may have posted, our big garage freezer died a few weeks ago after
~33 years of use. A new one was delivered last week.

As I transferred food back into the new unit, I noticed that there
wasn't much freezer apricot jam, our favorite, remaining.

Apricots are expensive enough in season ($3-$4 a pound here) but now
they are just plain unavailable.

I decided to take a tip from She Who Shall Remain Nameless and wing it.
I bought two pounds of frozen peaches, simmered dried 'cots in some
boiling water, and proceeded to make "Peachy Apricot Jam", cooked and
BWB sealed.

I took the jars out less than 3 minutes ago and have heard a very
encouraging number of "plinks".

The only problem was knocking a jar off the counter as I was filling and
seeing it shatter. Luckily it only had a tiny bit of jam in it, but it
still made a considerable mess.

Thanks to y'all for all the information and encouragement you have provided.
