Hi,
Does anyone have a rough idea of what a quart/liter of raspberries will yield in juice? I realize that it will vary, I just need a rough approximation. Also, does anyone happen to know what a quart/litre of raspberries weighs? Thanks. |

Rory,
The BALL complete book of home preserving says this about raspberries. 1 quart whole weighs 1 pound or 500 g and measures in at 4 cups. 1 quart you would need to purchase 2 pint containers. 1 quart berries that are later crushed will yield 1 and 3/4 to 2 cups crushed berries. So I would say that 1 quart raspberries will give you a little under 1 and 1/2 C juice. That is my estimate. Are you going to can the pure juice or make jelly? The preserving book says to crush the berries and let them sit in a colander lined with cheesecloth or a jelly bag to drip. But ther are other ways to get raspberry juice. I have a vegetable and fruit juicer that will strain out the seeds. I have also seen some steam juicers, not sure how those work. Ann |

According to the Certo instruction sheet, 5 pints of crushed raspberries should yield 4 cups of juice. 4 pints of crushed berries will give you 4 cups of mashed berries for jam. -- Susan N.
