Default Drying glace fruit

We have just made glace cumquats (or kuquats if you insist) The preparation
went well but after the last soaking in syrup we got to the drying. The
recipe was very vague. It said 'dry them if possible in a very slow oven'.

Is it better to dry in the air or in an oven?

What is the best temperature? "very slow" is about 130C which seems too hot
to me.

How do you know when they are done?
