Currently we obtain the Wild Maguey (salmiana) of the cooperatives that encircle the Factory, having commodity to produce 1,550,000 annual liters, Being able to duplicate our production expanding our maguey provision zone. The Maguey that work in the Factory of Mescal, is property of the coop members and we buy him for contracts that we celebrate yearly, Having as the witnesses the Government of the State. Them they mentioned cooperatives are benefited al to be able to sell their maguey and is one of the forms as they obtain their incomes, In the Factory of Mescal we have at present a form of 85 workers in all the process of the elaboration of the mescal, The ovens that have in it manufactures they are 4 of vapor with a capacity of 25 tons each one and 3 wood-fired ovens with capacity of 20 tons each one, The grinding we carry out it in a mill of stone prompted by a tractor. The fermentation we carry out it in 6 special batteries with capacity of 10,000 liters each one. The distillation we carry out it in an alembic of copper with a capacity of 900 liters by stop each 2 hours, The difference of our Factory of Mescal with the other Factories of Mescal of the Mexican republic is that we have a production in series. The asesorìa that receive constantly to have always the same quality, we receive it of different Centers of Investigation of Mexico Our Factory this in the best disposition to sell its products, as well as for assemble Mescal with the quality that requires the Counsel Mexican Regulator of the Quality of the mescal (COMERCAM). We are in the best disposition to quote Mescal for export in bulk |
