Default Chuletas Agridulces (Sweet and Sour Pork Chops)--but what is "maicena"?

What is "maicena"? Is it mace?
What are "clavos de olor"? Are they the cloves you stick
in a ham, before baking it?
What does "rojada" mean? Something reddened?
What are "lonjas"?

Cornstarch, aka cornflour in the UK

What are "clavos de olor"? Are they the cloves you stick
in a ham, before baking it?

Yes, they are cloves.

What does "rojada" mean? Something reddened?

I don't know. But if it was "rajada" instead, it might be
referring to the slices. Interestingly, my dictionary points out in
the listing for "raja" that the word "rodaja" also means "slice". I
wonder if "rojada" was a typo?

What are "lonjas"?

Slices or strips.
