Default Cheesy Mexican Chicken Skillet

Cheesy Mexican Chicken Skillet

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 small boneless skinless chicken breast halves
1 1/2 cups water
1 (10 3/4 oz) can condensed cream of chicken soup
1 (1 1/4 oz) package Taco Bell Home Originals taco seasoning
mix
2 cups uncooked Minute white rice
1 package Velveeta Mexican shredded pasteurized
prepared cheese food - divided

Heat large nonstick skillet sprayed with no stick cooking spray on
medium-high heat. Add chicken; cover. Cook 5 minutes on each side or until
cooked through. Remove chicken from skillet.

Add water, soup and seasoning mix to skillet; bring to boil. Stir in rice
and 1 cup of the process cheese food. Top with chicken. Reduce heat to
low; cover. Cook 5 minutes.

Sprinkle with remaining 1 cup process cheese food. Cover. Let stand 1 to 2
minutes or until process cheese food is melted.

This recipe yields 4 servings.

I don't normally complain (though I have more recently), but please.
The only ingredients/flavorings besides the chicken are cream of chicken
soup, Taco Bell seasoning mix, minute rice, and Velveeta cheese. This
is a mexican recipe we should be interested in??! I don't care about
true Mexican versus Southwestern, but this?

Maybe I should try it though, since it is a 0 calorie, 0 fat recipe, and
I need to be on a diet! I would like a little fiber and protein though.

If you are talking Old Magic 1, fine, but if you are talking about me,
I'm not a troll (never exactly understood the meaning), but perhaps
quite naive about etiquette because I was more of a lurker when there
used to be excellent Mexican cooks talking. I simply think some stuff
posted here now is garbage, when it used to be a great NG. If I don't
follow etiquette, please let me know and I will learn.

In case you are not the poster formerly known as A1, I'll remind you
that he would post off-topic recipes and then brag on at least one
other newsgroup about how he could shake people up at afm-c. Emulating
his type of posts here seems a strange way to go about bringing some
life back. What good have you done?

If you happen to know anything about Mexican food, which you have yet
to show, how about sharing some of that knowledge and interest instead
of merely regurgitating silly recipes you found somewhere else, and
than tagging "lol" onto any comments you make.
