Got recipes?

Ahogadoras (tortas de carne)
Small, unsweetened raised flour cakes, smothered in chile sauce and
topped with beef

Caldillo durangueno
Durango style broth

Cazuela
A stew of some sort, cooked in a casserole

Chipotles con piloncillo rellenos de queso
Chipotle chiles stuffed with cheese and brown sugar

Enchiladas en cacahuate
Tortillas, some kind of chile sauce with peanuts in it, possibly baked
to melt grated cheese?

Entomatadas
Tortillas dipped in tomato sauce, maybe some cheese, meat, chicken on
top, or rolled inside

Gallina borracha
Drunken chicken or a cheap cut of beef like flank steak, slow cooked
in its own juices and some beer or wine

Pollo en limon
Lemon chicken

Queso asadero
Roasted cheese

Queso menonita
Mennonite cheese, has a mild cheddar flavor. Also called Queso
Chihuahua

A dry onion "soup"

on a metate. This powder can be eaten dry (with cinnamon and

Roast Venison

Milk and sugar with quince, boiled down to a paste

Dulces de nuez, almendra, manzana y tejocote
Sweets made of walnuts, almonds, apples, and a fruit resembling a crab
apple

Frutas cristalizadas
Dried fruits coated with sugar like you would see in a fruitcake
